Pork Adobo
The "Lazy Two-Step" version: No searing, no fuss, just big flavor for the whole family.
Ingredients (Scaled)
- 3.6 kg pork, cubed
- 1.2 kg potatoes, cubed (large)
- 240 ml (1 cup) white vinegar
- 480 ml (2 cups) soy sauce
- 960 ml (4 cups) water
- Salt to taste
- 20 cloves garlic, crushed
- 12 dried bay leaves
- 4 tbsp whole peppercorns
- 8 tbsp (½ cup) cooking oil
- 3–5 tbsp sugar (adjust to taste)
Lazy Two-Step Cooking Instructions
- Cook the Pork Place pork, garlic, bay leaves, peppercorns, sugar, soy sauce, vinegar, water, and oil in a large pot. Bring to a boil, then reduce heat to low and simmer for 20–25 minutes. The pork will start tenderizing and absorb those classic adobo flavors. No need to stir-fry first!
- Add Potatoes Add the cubed potatoes to the pot. Simmer for another 15–20 minutes until potatoes are tender and pork is fully cooked. Taste and adjust with salt or sugar if needed. Optional: Remove the lid for the last 5–10 minutes to thicken the sauce if desired.
